Abstract
A stabilizer for milk products comprised of a carrageenan extractive of Eucheuma cottonii seaweed having a water viscosity at 1.5% concentration and 75.degree. C. of not less than 5 mPa.s and not more than about 20 mPa.s.
Claims6
A modified sulfated hydrocolloid extractive of Eucheuma cottonii for use in stabilizing milk-based products, said hydrocolloid in the form of a salt of calcium, magnesium, potassium or sodium or a mixture thereof, being characterized in that the viscosity in a 1.5% water solution is between 5 and 20 mPa.s at 75.degree. C.
A modified sulfated hydrocolloid extractive of Eucheuma cottonii for use in stabilizing milk-based products, said hydrocolloid in the form of a mixture of calcium, magnesium, potassium, and sodium salts in which the dominant cations are divalent, said hydrocolloid being characterized in that the viscosity in a 1.5% water solution is between 5 and about 10 mPa.s at 75.degree. C.
A modified sulfated hydrocolloid extractive of Eucheuma cottonii for use in stabilizing milk-based products, said hydrocolloid in the form of a mixture of calcium, magnesium, potassium, and sodium salts in which the dominant cations are alkali metal cations selected from the group consisting of potassium and sodium, said hydrocolloid being characterized in that the viscosity in a 1.5% water solution is between about 10 and 20 mPa.s at 75.degree. C.
