Abstract
A fibrous protein material prepared by dispersing into an aqueous slurry or paste of protein an emulsion containing oil and water phases, and treating the mixture to give fibrous texture. The emulsion used has an external phase which is the oil phase and may contain a flavoring agent in its water phase.

A method for manufacturing a fibrous protein material which comprises the steps of dispersing into an aqueous slurry or paste of protein an emulsion containing oil and water phase, the external phase of said emulsion being the oil phase, to mix said emulsion with said slurry or paste, and forming the mixture into fibrous material.
A protein product comprising a fibrous protein material having an emulsion dispersed therein, said emulsion containing water and oil phases, the external phase of said emulsion being the oil phase.
