Abstract
A method of preparing sucroglycerides by transesterification of sucrose and a triglyceride, whereby there is conducted a limited alcoholysis of the triglyceride before reaction with the sucrose. The sucroglycerides obtained have interesting emulsifying properties and can be used to advantage in foodstuffs.
Claims24
A process of preparing sucroglycerides, which comprises the steps of reacting a triglyceride and an alcohol selected from the group consisting of ethanol and mixtures of ethanol and glycerol, the amount of said ethanol being between about 2% and 30% of the weight of said triglyceride, in the presence of an alcoholysis catalyst at a temperature of between about 80.degree. and 180.degree. C. and introducing to that reaction mixture sucrose and a basic transesterification catalyst while maintaining the mixture at a temperature of between about 120.degree. and 145.degree. C.
