Abstract
Oligomeric or polymeric triaryl- and substituted triarylphosphine compounds which are non-digestible and non-absorbable by animals are disclosed. These compounds act as antioxidants by inhibiting the buildup of hydroperoxides of unsaturated fatty acids, e.g., in foods.
Claims4

- ##STR9## wherein R.sub.1 and R.sub.2 are each selected from the group of aryl and substituted aryl, n is an integer from 0 to 4, and y is an integer from 1 to 4;
- or ##STR10## wherein x is an integer of from 2 to about 15 and R.sub.3 and R.sub.4 are each selected from the group of aryl and substituted aryl.
