.beta.-Phellandrene is prepared by pyrolyzing a para-menth-1-ene-7-sulfonate salt.

A process for making .beta.-phellandrene comprising:
- heating a para-menth-1-ene-7-sulfonate salt at about 150.degree. to about 350.degree. C under non-acidic conditions until said .beta.-phellandrene is formed.
