A Fro-Dex.RTM. malto-dextrin poly(H-)sulfate and salt thereof prepared by sulfating a Fro-Dex.RTM. malto-dextrin in the presence of a member selected from the group comprising alkali metal, alkaline earth metal, trialkylamine (C.sub.1 -C.sub.6), alkanolamine (C.sub.1 -C.sub.6), cycloalkanolamine (C.sub.3 -C.sub.6), pyrazine and piperidine.
