Abstract
In a process for extracting protein from lupins and other low fat seeds the improvement comprising saturating the seeds with water and wet milling them prior to extracting the protein thereby avoiding undue denaturation of the protein.

In a process for the extraction of protein from low fat seeds, the improvement comprising soaking the seeds in an aqueous medium until the seed are saturated with water and wet milling the seeds prior to extracting the protein from the seeds.
