Abstract
A process for converting dihydroxyacetone into glyceraldehyde comprising the step of enzymatically converting dihydroxyacetone into glyceraldehyde using an isomerase that is capable of catalyzing the conversion of dihydroxyacetone into glyceraldehyde. The invention also relates to an isomerase for converting dihydroxyacetone into glyceraldehyde.
