Abstract
Provided is a method of producing a freeze-dried probiotic composition as well as a method of producing a probiotic raw material which involves culturing of a Streptococcus salivarius strain. Furthermore, a corresponding probiotic composition and a corresponding probiotic raw material is provided.
Claims35
A method of producing a freeze-dried probiotic composition comprising at least the following steps:
- (i) cultivating Streptococcus salivarius in growth medium comprising dextrose as carbon source at pH 6.8 to 7.2;
- (ii) lowering the pH to pH 5 by adding a pH lowering agent when the dextrose concentration reaches 10-15 g/L and raising the pH after 30 min to 3 hours to pH 6.8 to 7.2 until cultivation ends;
- (iii) concentrating the culture;
- (iv) mixing the concentrated culture with lyoprotectants;
- (v) freeze drying the mixture;
- and optionally
- (vi) milling and homogenizing the mixture.

A freeze-dried probiotic composition obtained by a method comprising at least the following steps:
- (i) cultivating Streptococcus salivarius in growth medium comprising dextrose as carbon source at pH 6.8 to 7.2;
- (ii) lowering the pH to pH 5 by adding a pH lowering agent when the dextrose concentration reaches 10-15 g/L and raising the pH after 30 min to 3 hours to pH 6.8 to 7.2 until cultivation ends;
- (iii) concentrating the culture;
- (iv) mixing the concentrated culture with lyoprotectants;
- (v) freeze drying the mixture;
- and optionally
- (vi) milling and homogenizing the mixture.
A freeze-dried probiotic composition comprising 25-35% Streptococcus salivarius, 40-50% maltodextrin, 10% trehalose, 5% lactitol, and 2-5% moisture.
A freeze-dried probiotic composition comprising Streptococcus salivarius, trehalose, dextrose, sodium ascorbate and sodium citrate.
