Abstract
It is described a compound according to formula (I) wherein either R1 is methyl or ethyl, and wherein R2 and R3 are independently selected from the group consisting of 2-phenylvinyl, phenyl, 3,4-dimethylphenyl, p-methoxyphenyl, 2-(p-methoxyphenyl)vinyl and 2-but-2-ene. Said compound can be used as an ingredient to confer, enhance, improve or modify the umami taste.

A compound according to formula (I)
- wherein either R1 is methyl or ethyl,
- and wherein R2 and R3 are independently selected from the group consisting of 2-phenylvinyl, phenyl, 3,4-dimethylphenyl, p-methoxyphenyl, 2-(p-methoxyphenyl)vinyl and 2-but-2-ene,
- and wherein the compound is not methyl N2,N6-dibenzoyllysinate.
A method of utilizing a compound according to formula (I)
- wherein either R1 is methyl or ethyl,
- and wherein R2 and R3 are independently selected from the group consisting of 2-phenylvinyl, phenyl, 3,4-dimethylphenyl, p-methoxyphenyl, 2-(p-methoxyphenyl)vinyl and 2-but-2-ene,
- as an ingredient to confer, enhance, improve or modify the umami taste of a consumable composition, wherein the method comprises adding at least one compound according to formula (I) to a product base.
