Disclosed herein is a process for making a compound of formula (I) as defined herein by reacting a precursor compound of formula (Ia) as defined herein with an acyltransferase enzyme. In some embodiments the compound of formula (Ia) is aromadendrin, taxifolin, dihydrotamarixetin, 3′—O-methyltaxifolin, pinobanksin, 5-deoxyaromadendrin, 5-deoxytaxifolin, 5-deoxydihydrotamarixetin, 5-deoxy-3′—O-methyltaxifolin or 5-deoxypinobanksin. In some embodiments the compound of formula (I) is aromadendrin-3-O-acetate, taxifolin-3-O-acetate, dihydrotamarixetin-3-O-acetate, 3′—O-methyltaxifolin-3-O-acetate, pinobanksin-3-O-acetate, 5-deoxyaromadendrin-3-O-acetate, 5-deoxytaxifolin-3-O-acetate, 5-deoxydihydrotamarixetin-3-O-acetate, 5-deoxy-3′—O-methyltaxifolin-3-O-acetate or 5-deoxypinobanksin-3-O-acetate. Also disclosed herein are acyltransferase enzymes that can be used in this process and certain compositions that include such flavanone derivatives, such as compositions that include such flavanone derivatives and one or more other sweeteners.
A process for making a compound of formula (I):
A recombinant polypeptide having acyltransferase activity and comprising an amino acid sequence having at least 70%, 75%, 80%, 85%, 90%, 95%, 96%, 97%, 98% or 99% sequence identity to any of SEQ ID NOs:
A recombinant cell comprising a compound of formula (I);
