Abstract
The present disclosure relates to a Leuconostoc strain, a fermentation starter composition comprising the same, and a method for preparing kimchi using the strain.

A method of preparing kimchi, the method comprising
- adding a Leuconostoc mesenteroides strain including the nucleotide sequence of SEQ ID NO:
- 1 or 2 to Chinese cabbage, and
- fermenting the Chinese cabbage, thereby producing kimchi,
- wherein the kimchi has reduced gas generation compared to kimchi prepared without the Leuconostoc mesenteroides strain, and
- the Leuconostoc mesenteroides strain is a Leuconostoc mesenteroides strain deposited with Accession number KCTC 13043BP or a Leuconostoc mesenteroides strain deposited with Accession number KCTC 13044BP.
