A multi-module food processing system is provided for the thermal treatment of produce, featuring a unified processing tunnel that incorporates various oven modules. These include microwave oven modules for volumetric heating, combination steam-convection oven modules for applying heated air and steam, and an infrared oven module for surface heating. The system is equipped with a belt conveyor for transporting produce through the tunnel and a computer-control module for monitoring and regulating energy inputs, temperature and humidity levels, and conveyor speed. The method involves spreading produce into a uniform layer, sequentially conveying it through the different modules to achieve desired internal and surface temperatures, and reducing the product layer depth. The coordinated application of volumetric, convective, and surface-directed heating enables rapid pathogen reduction and enzyme deactivation while preserving sensory quality of the produce.
