Abstract
The present invention relates to methods for the production of D-tagatose, said methods using an L-arabinose isomerase enzyme derived from Lentilactobacillus parakefiri, as well as respective products containing D-tagatose.
Claims12
A method for the production of D-tagatose, comprising the steps of:
- (a) providing a solution containing D-galactose;
- (b) adding an enzyme having L-arabinose isomerase activity to the solution provided in step (a), wherein said enzyme comprises an amino acid sequence having at least 70% sequence identity to SEQ ID NO:
- 1 and having L-arabinose isomerase activity;
- and
- (c) incubating the solution with the added enzyme having L-arabinose isomerase activity under conditions and for a duration of time allowing for the enzymatic isomerization of the D-galactose to D-tagatose by said enzyme having L-arabinose isomerase activity, wherein step (c) is performed at an acidic pH.
