Abstract
The present invention is related to a method of improving the color stability of an oil soluble colorant in a consumable comprising adding to a consumable base an effective amount of an oil soluble colorant encapsulated with at least one of: a whey containing protein, a milk polysaccharide such as lactose and glycoprotein and/or a plant protein.

An oil soluble colorant encapsulated with at least one of:
- a whey containing protein, a milk polysaccharide and/or a plant protein.
A method for preparing an oil soluble colorant having an improved color shelf life, a reduced oxidation and/or reduced development of off-notes, the method comprising encapsulating an oil soluble colorant with at least one of a whey containing protein, a milk polysaccharide, and/or a plant protein.
