A method of cooking food product, comprising;
- providing food product to a rotary blancher;
- moving the food product through the rotary blancher;
- cooking the food product to a desired moisture level as it moves through the rotary blancher;
- transferring the food product from the rotary blancher to a tempering belt;
- and
- moving the food product on the tempering belt at a controlled temperature to allow the moisture in the food product to trend towards equilibration at the controlled temperature.
3 more elements
A food product cooker, comprising:
- means for cooking the food product to a desired moisture level;
- means for tempering the food product after it has been cooked to the desired moisture level;
- and
- means for transferring the food product from the means for cooking to the means for tempering, wherein the means for transferring is operatively connected to an output of the means for cooking and further operatively connected to the means for tempering.
1 more element
