A data processing method, an apparatus, and a system are disclosed An encoder obtains baseline data, gain map data, and metadata of a first image, and encodes the baseline data, the gain map data, and the metadata to obtain a bitstream. A decoder receives and parses the bitstream to obtain the baseline data, the gain map data, and the metadata of the first image. The decoder determines and converts target data (that is, the baseline data, or the gain map data, or an image obtained by combining the baseline data and the gain map data) based on conversion information carried in the metadata. In this way, the decoder converts the target data based on the conversion information matching the target data, so that a dynamic range of an image obtained through conversion can better adapt to a dynamic range supported by a display device, thereby improving display effect.
