Abstract
Disclosed herein are novel recombinant endo-β-N-acetylglucosaminidases enzymes and methods of using endo-β-N-acetylglucosaminidases enzymes.
Claims5
A recombinant protein comprising an amino acid sequence of SEQ ID NO:
- 4, SEQ ID NO:
- 5, or SEQ ID NO:
- 6.
A method of using an enzyme comprising:
- orally ingesting an enzyme and one or more foodstuffs to increase the released N-glycan content of the one or more foodstuffs during digestion, wherein the enzyme comprises an amino acid sequence of SEQ ID NO:
- 4, SEQ ID NO:
- 5, or SEQ ID NO:
- 6, and wherein the one or more foodstuffs comprise one or more glycoproteins.
1 more element
A composition comprising the amino acid sequence of SEQ ID NO:
- 4, SEQ ID NO:
- 5, or SEQ ID NO:
- 6, and a glycoprotein.
