Abstract
The disclosure relates generally to methods for sanitizing dishware without conventional chemical sanitizing agents. The methods effectively sanitize dishware at low temperatures with an aqueous composition comprising alkali metal hydroxide.
Claims22
A low-temperature method of cleaning and sanitizing dishware, the method comprising:
- contacting the dishware with an aqueous composition comprising greater than about 100 ppm alkali metal hydroxide for at least about 30 seconds at a temperature of less than about 70° C.;
- and
- rinsing the dishware at a temperature less than about 70° C.,
- wherein the aqueous composition is free of chlorine, iodine, and quaternary ammonium compounds.
