Abstract
The present invention pertains to a novel complex of rebaudioside D having increased water-solubility, and a novel method for increasing the solubility of rebaudioside D in water. The present invention provides a complex containing Reb. D and one or more compounds selected from sugars as well as water-soluble vitamins and salts thereof, wherein the water-solubility of Reb. D at a water temperature of 25° C. is 75 mg/100 g-H2O or higher.

A method for producing a complex comprising:
- Reb. D;
- and
- at least one compound selected from carbohydrates and water-soluble vitamins and salts thereof,
- wherein the method comprises:
- heating at least one compound selected from carbohydrates and water-soluble vitamins and salts thereof to form a melt;
- dissolving Reb. D in the melt;
- and
- cooling the melt in which Reb. D is dissolved.
