Disclosed is an apparatus, system, and method for making beverages using controllable temperature brewing techniques. The controllable temperature brewing uses brewing water within an approximate a target range of 100° F. to 207° F. Included are additional brewing controls, including a controllable air pump to pressurize the water flow through a spray head with a selectively controllable additional pressure within the range of approximately 0.25 to 0.50 psi pressure. One embodiment uses two controllable proportional water valves, one on the ambient water line and one on the tank inlet line. The two controllable proportional control valves help to control the water temperature to provide a wide range of controllable water temperatures. The apparatus, system, and method produces beverages and beverage concentrate that can be consumed as is or used in other beverages such as cold brew beverage recipes for use in preparations for final mixed beverages. The apparatus, system, and method produces the resultant beverage in significantly less time than traditional beverage making methods.
