Abstract
The present invention refers to a process for obtaining edible biomass departing from by-products of the food industry; to the edible biomass thus obtained; to the use of the edible biomass for the manufacture a food product, or to a food product comprising the edible biomass obtained by means of the above cited process.
Claims10
A method for obtaining edible biomass comprising:
- a) solubilizing and/or resuspending a by-product of the food industry;
- b) fermenting the by-product solution or suspension in the presence of a Crabtree-negative yeast;
- and
- c) inactivating the Crabtree-negative yeast and degrading unwanted nucleic acids in one step to obtain the edible biomass by setting a temperature of 75-130° C. for 5-60 minutes, wherein the method does not comprise a washing step after the inactivation of the Crabtree-negative yeast and degradation of the unwanted nucleic acids.
