A monitoring device for a carbonic acid solution comprises: a container for holding a selected volume of an aqueous solution; a source of a plane polarized laser beam at a selected wavelength propagating longitudinally through the solution; two photodetectors arranged to measure the intensity of light from said propagating laser beam scattered in two respective directions θ1, θ2 normal to the beam path, wherein the first of the two directions is parallel (θ1=θ°) to the direction of polarization and the second of the two directions forms a nonzero angle (θ2>0°) with the direction of polarization. The ratio of the scattered intensity in the two respective directions may used to determine a measure of quality of the carbonic acid wherein a greater degree of scattering in the direction of polarization θ1 than in the second direction θ2 indicates a more complete formation of stable carbonic acid.
