Provided herein are compositions, methods, and kits related to chymotrypsin production for characterizing proteins, assessing, and monitoring disease stages and phases, predicting the likelihood of disease progression, predicting and monitoring responses to disease therapies, and treating disease conditions.

- (a) a cell comprising an exogenous nucleic acid sequence encoding a recombinant chymotrypsin polypeptide comprising at least 70% sequence identity to SEQ ID NO:
- 32 or 33;
- (b) a nucleic acid sequence encoding a recombinant chymotrypsin polypeptide comprising at least 70% sequence identity to SEQ ID NO:
- 32 or 33;
- or
- (c) a recombinant chymotrypsin polypeptide comprising at least 70% sequence identity to SEQ ID NO:
- 32 or 33.
