Abstract
A method for producing an acetic acid bacteria-containing composition is provided. The method includes culturing acetic acid bacteria of the genus Acetobacter, collecting the bacteria, and washing the bacteria. The acetic acid bacteria-containing composition includes nonanal, methylheptenone, dimethyl trisulfide, and 2-tridecanone so that the peak area ratio of nonanal to methylheptenone (nonanal:methylheptenone) is 1:10 to 100:1, the peak area ratio of nonanal to dimethyl trisulfide (nonanal:dimethyl trisulfide) is 1:100 to 50:1, and the peak area ratio of nonanal to 2-tridecanone (nonanal:2-tridecanone) is 1:100 to 100:1.

A method for producing an acetic acid bacteria-containing composition, comprising (i) culturing an acetic acid bacteria, (ii) collecting the acetic acid bacteria after step (i), and (iii) drying the acetic acid bacteria after step (ii), wherein:
- the acetic acid bacteria belong to the genus Acetobacter;
- step (i) further comprises mixing the acetic acid bacteria with nonanal and methylheptenone so that the peak area ratio of nonanal to methylheptenone (nonanal:methylheptenone), as determined by solid-phase microextraction gas chromatography-mass spectrometry, is 1:10 to 100:1;
- and
- in step (i), the acetic acid bacteria comprises acetic acid bacteria, dimethyl trisulfide, and 2-tridecanone so that the peak area ratio of nonanal to methylheptenone (nonanal:methylheptenone) is 1:10 to 100:1, the peak area ratio of nonanal to dimethyl trisulfide (nonanal:dimethyl trisulfide) is 1:100 to 50:1, and the peak area ratio of nonanal to 2-tridecanone (nonanal:2-tridecanone) is 1:100 to 100:1.
A method for producing an acetic acid bacteria-containing composition, comprising:
- culturing acetic acid bacteria comprising nonanal, methylheptenone, dimethyl trisulfide, 2-tridecanone;
- collecting the acetic acid bacteria;
- washing the collected acetic acid bacteria with water, thereby obtaining the acetic acid bacteria-containing composition, wherein:
- the acetic acid bacteria belong to the genus Acetobacter;
- the acetic acid bacteria-containing composition has, as determined by solid-phase microextraction gas chromatography-mass spectrometry;
A method for producing an acetic acid bacteria-containing composition, comprising:
- culturing acetic acid bacteria comprising nonanal, methylheptenone, dimethyl trisulfide, 2-tridecanone;
- collecting the acetic acid bacteria;
- washing the collected acetic acid bacteria;
- drying the washed acetic acid bacteria;
- and
- subjecting the dried acetic acid bacteria to a high-temperature treatment under low pH conditions, thereby obtaining the acetic acid bacteria-containing composition, wherein:
- the acetic acid bacteria are Acetobacter malorum,
- the washing comprising adding water and subjecting the collected acetic acid bacteria and the added water to solid-liquid separation, the water being added at least twice,
- the acetic acid bacteria-containing composition has, as determined by solid-phase microextraction gas chromatography-mass spectrometry;
