Claims20
A method for providing a reduced sugar dairy product, the method comprising:
- pumping a first volume of a dairy product through a first ultra-filtration unit, to provide a first retentate and a first permeate;
- discarding the first permeate;
- adding a volume of water to the first retentate to provide a diluted retentate;
- pumping the diluted retentate through a second ultra-filtration unit, which is the same or different from the first ultra-filtration unit, to provide a second retentate and a second permeate;
- discarding the second permeate;
- for the second retentate, repeating steps, n times, of adding a volume of water to provide a subsequent diluted retentate, pumping the subsequent diluted retentate through a subsequent ultra-filtration unit, which is the same or different from any previous ultra-filtration unit, and discarding a subsequent permeate, to provide a new retentate, where n is an integer between 0 and 30;
- adding minerals comprising one or more potassium salts, wherein potassium is in an amount of 20 mg to 400 mg per 100 g of the new retentate, to the new retentate;
- and
- pasteurizing, ultra-pasteurizing, and/or sterilizing the new retentate, wherein the method removes at least 25% of sugar present in the dairy product.
