Abstract
Disclosed is a method of inhibiting isomerization of a reducing saccharide in an aqueous solution containing said reducing saccharide upon thermal treatment of said aqueous saccharide solution by acidifying the aqueous saccharide solution prior to its thermal treatment, and the use of the thermally treated aqueous solution containing said reducing saccharide for producing a biological product.

A method of biotechnological production of a biological product, the method comprising the steps of:
- a) producing a sterile aqueous solution comprising lactose, the production comprising thermal treatment of a lactose containing solution, wherein the solution is acidified to a pH of between about 2 to about 5 prior to and/or during the thermal treatment, wherein the thermal treatment is conducted at a temperature between about 115° C. and about 150° C. and wherein the aqueous solution comprising lactose comprises lactose in a concentration of at least 0.66 M;
- b) providing at least one cell that is capable of producing the biological product;
- c) cultivating the at least one cell in a fermentation broth comprising the aqueous solution comprising lactose under conditions for the at least one cell to produce the biological product in the fermentation broth;
- and
- d) optionally purifying the biological product from the fermentation broth.
