Abstract
Compositions comprising one or more recombinant cascin proteins or fragments of recombinant cascin proteins and microbial lipids and methods of producing such compositions are provided.

A dairy-like composition comprising:
- one or more recombinant casein proteins or fragments thereof;
- and
- microbial lipids.
The composition of claim 1 or claim 2 wherein the one or more recombinant casein proteins are selected from the group consisting of αS1-casein, αS2-casein, β-casein and κ-casein. 4 The composition of any one of claims 1 to 3 wherein the one or more casein proteins comprise αS1-casein and/or β-casein.
A method of producing a dairy-like composition the method comprising mixing one or more recombinant casein proteins or fragments thereof with microbial lipids.
