Abstract
The present application relates to a food having two or more divided sections having different permittivities, and a production method and design method therefor.
Claims18
A single-category food comprising divided sections, two or more of which have different permittivities, wherein the food is uniformly heated by microwave irradiation.
A production method for a food uniformly heated by microwave irradiation, comprising steps of:
- (a) dividing a single-category food into two or more parts;
- (b) differentiating components or their contents that affect permittivity in the two or more parts so that the two or more divided parts have different permittivities;
- and
- (c) producing a single-category food containing two or more divided sections having different permittivities using two or more parts having different permittivities.
1 more element
A method of designing a structure of a divided section in a single-category food to improve heating uniformity, comprising the steps of:
- (a) measuring one or more characteristic values selected from the group consisting of permittivity, specific heat, thermal conductivity, density and porosity of the single-category food;
- (b) evaluating non-uniformity of heating of the single-category food using the measured characteristic value and the heating characteristic data of a heating device;
- and
- (c) determining the number, size, or positional relationship of the divided section in the food, and adjusting the characteristic values of the food within the divided section, when non-uniformity of heating of the single-category food exists.
