Abstract
Foods are described that provide controlled release of stabilized bacteria into the oral cavity on consumption, as well as their use. Such foods promote colonization of oral surface by the bacteria. Bacteria are selected to treat an oral condition, such as oral disease, halitosis, and/or stained enamel on consumption of the food.
Claims17
A food substance comprising a plurality of particulates distributed within the food substance, wherein each of the plurality of particulates comprises a protective shell encapsulating a stabilized bacterial formulation, wherein the protective shell is degraded by or soluble in substances found in a human mouth, and wherein the stabilized bacterial formulation comprises an isolated, non-pathogenic, hydrogen peroxide bacterial species or strain and a genetically modified LDH-deficient bacterial strain.
A food substance comprising a plurality of particulates distributed within the food substance, wherein each of the plurality of particulates comprises a low melting point matrix and a stabilized bacterial formulation imbedded within the low melting point matrix, wherein the protective shell is degraded by or soluble in substances found in a human mouth, wherein the stabilized bacterial formulation comprises an isolated, non-pathogenic, hydrogen peroxide bacterial species or strain and a genetically modified LDH-deficient bacterial strain, and wherein the low melting point matrix has a melting point of less than 35° C.
