The present invention relates to a novel Streptococcus thermophilus strain having improved texturizing properties, compositions comprising said strain as well as fermented products manufactured using said strain.

A mutant Streptococcus thermophilus strain derived from a galactose-negative mother strain having a transposase insertion element in its galactose operon promotor region, wherein said mutant Streptococcus thermophilus strain lacks a transposase insertion element in its galactose operon promotor region and is galactose-positive.
