Abstract
Provided herein are cheese and yogurt compositions and the methods of making the same using one or more recombinant proteins.
Claims27
An edible composition comprising recombinant kappa casein protein,
- wherein at least one property of the edible composition selected from the group consisting of texture, stretch, taste, melt, and hardness, is comparable to a dairy-derived edible composition, and
- wherein 100% of casein protein in the edible composition is the recombinant kappa casein protein.
An edible colloid, comprising a recombinant kappa casein protein, wherein the recombinant kappa casein protein is present in a colloidal form and is 90% to 100% of the protein content of the colloidal form.
