Abstract
The apparatus for cooking food with superheated steam includes an external casing (2) comprising inside a cooking chamber (4), suitable for containing one or more foods; a steam generating device (30) associated with said casing (2), capable of vaporizing a liquid; a superheating device (31) of said steam associated with said steam generating device (30), said superheating device (31) being configured to heat said steam up to an operating temperature (T) higher than the boiling temperature of said liquid and to enable said superheated steam to come out towards said cooking chamber (4).
Claims15
An apparatus for cooking food with superheated steam, the apparatus comprising:
- an outer casing, with an inside cooking chamber, adapted to contain one or more foods;
- a steam generating device associated with said outer casing, adapted to vaporize a liquid, said steam generating device comprising at least one heating element and at least one thermally conductive element, said at least one heating element being adapted to heat said inserted liquid, in use, inside said steam generating device, said heating element also being adapted to heat said thermally conductive element so as to store a predetermined amount of energy to be used to generate steam in said thermally conductive element, said at least one heating element comprising an electric resistance, said electric resistance having a substantially flat spiral shape;
- and
- a superheating device of said steam associated to said steam generating device, said superheating device being configured to heat said steam up to an operating temperature higher than a boiling temperature of said liquid and to allow said superheated steam to come out towards said cooking chamber.
A method for generating steam comprising the steps of:
- a. arranging an apparatus for cooking food with superheated steam, the apparatus comprising:
- an outer casing, with an inside cooking chamber, adapted to contain one or more foods;
- a steam generating device associated with said outer casing, adapted to vaporize a liquid, said steam generating device comprising at least one heating element and at least one thermally conductive element, said at least one heating element being adapted to heat said inserted liquid, in use, inside said steam generating device, said heating element also being adapted to heat said thermally conductive element so as to store a predetermined amount of energy to be used to generate steam in said thermally conductive element, said at least one heating element comprising an electric resistance, said electric resistance having a substantially flat spiral shape;
- and a superheating device of said steam associated to said steam generating device, said superheating device being configured to heat said steam up to an operating temperature higher than a boiling temperature of said liquid and to allow said superheated steam to come out towards said cooking chamber;
- b. activating said at least one heating element to heat said at least one thermally conductive element until reaching a predetermined temperature (T1), and storing in said at least one thermally conductive element a predetermined amount of energy;
- c. inserting a liquid inside said steam generating device until a maximum quantity of liquid is reached and, at the same time;
- d. generating steam by direct contact of said liquid with said at least one thermally conductive element, using said predetermined amount of stored energy;
- and
- e. after a predetermined time interval from the beginning of said step of inserting said liquid and before the end of said step of inserting said liquid, generating steam by direct contact of said liquid with said at least one thermally conductive element and by boiling of said liquid.
