A method of producing a sugar solution-based gas hydrate slurry, comprising:
- (a) providing a sugar solution comprising water;
- (b) cooling the solution comprising water;
- (c) pressurizing the solution comprising water with gas, to provide a slurry comprising gas hydrates, wherein the gas is air and/or comprises one or more of carbon dioxide, nitrogen, nitrous oxide, argon and oxygen preferably the gas comprises carbon dioxide and/or nitrogen;
- and
- wherein the sugar solution in step (b) is cooled to between −10° C. and 10° C., and pressurizing the sugar solution comprising water with gas to a pressure from 10 to 300 bar.
A sugar solution-based slurry comprising gas hydrates, wherein the gas is air and comprises one or more of gases selected from the group consisting of carbon dioxide, nitrogen, nitrous oxide argon and oxygen.
A method of producing ice cream, comprising:
- (a) mixing a sugar solution-based gas hydrate slurry and a food matrix fluid to provide a sugar solution-based gas hydrate slurry/food matrix fluid mixture;
- (b) releasing the pressure and/or increasing the temperature of the sugar solution-based gas hydrate slurry/food matrix fluid mixture to provide a foamed sugar solution-based gas hydrate slurry/food matrix mixed fluid mixture;
- (c) fixing the foamed sugar solution-based gas hydrate slurry/food matrix fluid mixture by freezing at −25 to −5° C. to provide ice cream;
- and
- wherein the sugar solution-based gas hydrate slurry comprises one or more of gases selected from the group consisting of carbon dioxide, nitrogen, nitrous oxide argon and oxygen.
