A reaction mixture comprising a recombinant cell transformed with a polynucleotide that encodes a beta-glucosidase and rebaudioside W, wherein the beta-glucosidase is capable of converting rebaudioside W having the structure:
- to rebaudioside WB1, rebaudioside WB2, and combination thereof,
- wherein the rebaudioside WB1 has the structure:
- and wherein the rebaudioside WB2 has the structure:
A reaction mixture comprising rebaudioside WB1 and a recombinant cell transformed with a polynucleotide that encodes an UDP glycosyltransferase, wherein the UDP glycosyltransferase is capable of converting rebaudioside WB1 having the structure:
- to rebaudioside D4 having the structure:
A consumable product comprising a sweetening amount of Reb D4, Reb WB1, or Reb WB2.
