Packaged aquafaba having a protein content by weight of at least 0.5%. The packaged aquafaba is provided in liquid form and packaged in a pouch. Methods of making aquafaba and of using aquafaba and the products resulting therefrom are also disclosed.

Packaged aquafaba having a protein content by weight by weight of at least 0.5%.
A method of manufacturing aquafaba, comprising:
- pressure cooking legumes in water;
- separating the water from the legumes to obtain aquafaba;
- and
- optionally packaging the aquafaba.
