Abstract
An apparatus for the production of red wine is provided. This compact device is suitable for home and hobby use. The fermenting wine is contained inside a single-use plastic bag, eliminating cleaning. A reusable rubber bladder is inflated periodically to squeeze the cap and disperse it. At the conclusion of the fermentation, a perforated device is inserted into the fermentation bag and pneumatic bladders are sequentially inflated to press out the wine while retaining the waste skins and seeds.
Claims20
A device for the production of wine comprising:
- a rigid outer container having a bottom and a sidewall,
- a hermetically sealed fermentation bag sized to fit side the rigid outer container configured to be filled with a liquid and having a relief valve coupled to an opening in the fermentation bag, and
- means for agitating and wetting a cap formed in the liquid in the fermentation bag by providing equal radially inward directed pressure to all sides of the fermentation bag so that the liquid is forced in a vertical direction through the cap.
A system for pressing and punching fermenting liquids comprising:
- a rigid outer container having a bottom and a sidewall,
- a fermentation bag sized to fit inside an inflation bladder positioned interior to the rigid outer container, the fermentation bag configured to contain a liquid, a liquid cap, and a gaseous headspace, and
- a controller configured to automatically inflate and deflate the inflation bladder in a predetermined cycle.
A method for pressing fermented clean wine from a fermentation vessel comprising:
- coupling a perforated tube to a port of a fermentation bag so that the perforated tube extends from a bag headspace, through a wine cap and into the wine,
- inflating an upper chamber of an inflation bladder that surrounds the fermentation bag to drive all air in the bag headspace out of the fermentation bag, and
- inflating a lower chamber of the inflation bladder that surrounds a fermentation bag to drive all clean wine out of the fermentation bag into a collecting vessel, wherein the perforations block the cap from being driven out of the fermentation bag.
