## Abstract

A method for purifying rebaudioside A, which method comprises: (a) providing a solution comprising rebaudioside A; (b) concentrating the said solution; and (c) crystallizing from the solution a high purity composition comprising rebaudioside A, thereby to purify rebaudioside A.

## Claims

### Claim 1

A method for purifying rebaudioside A, which method comprises:
(a) providing a solution comprising rebaudioside A;
(b) concentrating said solution; and
(c) crystallizing from the solution a high purity composition comprising rebaudioside A, thereby to purify rebaudioside A.

### Claim 2 (depends on 1)

A method according to claim 1 for purifying a desired steviol glycoside, which method comprises:
(a) providing a solution comprising rebaudioside A at a purity of at least about 20% by weight on a dry basis;
(b) concentrating said solution;
(c) and crystallizing from the solution a high purity composition comprising rebaudioside A, thereby to purify rebaudioside A.

### Claim 3 (depends on 1)

A method according to claim 1 for purifying a desired steviol glycoside, which method comprises:
(a) providing a solution comprising rebaudioside A;
(b) concentrating said solution to achieve a solution comprising rebaudioside A at a concentration of at least about 80 g/L;
(c) and crystallizing from the solution a high purity composition comprising rebaudioside A, thereby to purify rebaudioside A.

### Claim 4 (depends on 1)

A method according to claim 1, wherein the high purity composition comprising rebaudioside A comprises rebaudioside A in a purity greater than about 60% by weight on a dry basis.

### Claim 5 (depends on 4)

A method according to claim 4, wherein the high purity composition comprising rebaudioside A comprises rebaudioside A in a purity greater than about 90% by weight on a dry basis.

### Claim 6 (depends on 1)

A method according to claim 1, wherein the high purity composition comprising rebaudioside A comprises at least about 98% by weight on a dry basis of total steviol glycosides.

### Claim 7 (depends on 1)

A method according to claim 1, wherein the high purity composition comprising rebaudioside A comprises no more than about 150 ppm on a dry weight basis of kaurenoic acid equivalents.

### Claim 8 (depends on 1)

A method according to claim 1, wherein the high purity composition comprises no more than about 2% on a dry weight basis of stevioside.

### Claim 9 (depends on 1)

A method according to claim 1, wherein the concentrating (b) does not comprise chromatography to concentrate the amount of the desired steviol glycoside.

### Claim 10 (depends on 3)

A method according to claim 3, wherein the concentrating (b) comprises:
a combination of ultrafiltration and nanofiltration;
evaporation;
and/or spray-drying the solution in (a) and then redissolving the spray-dried material.

### Claim 11 (depends on 1)

A method according to claim 1, wherein the high purity composition comprising rebaudioside A is crystallized from a water:organic solvent mixture.

### Claim 12 (depends on 1)

A method according to claim 1, further comprising seeding the solution comprising rebaudioside A with an amount of rebaudioside A sufficient to promote crystallization of the rebaudioside A.

### Claim 13 (depends on 1)

A method according to claim 1, further comprising separating and washing the high purity composition comprising rebaudioside A.

### Claim 14 (depends on 1)

A method according to claim 1, further comprising drying the high purity composition comprising rebaudioside A.

### Claim 15 (depends on 1)

A method according to claim 1, wherein a further purification crystallization is carried out.

### Claim 16 (depends on 1)

A method according to claim 1, wherein the rebaudioside A solution comprises fermentatively-produced rebaudioside A.
