A protein-fortified food product (NutriDeliS), comprising water, a starch thermoreversible gelling agent and at least 2 wt. % of protein.
A method of making a gelled food product, comprising mixing water, a starch thermoreversible gelling agent and at least 2 wt. % protein, heating the mixture to fully gelatinize the starch, and cooling the mixture for at least 5 hours, to obtain the gelled food product.
