- wherein R is —OH, C1-C4 alkyl, —CO2H, acyl or formyl;
- m is 2 or 3;
- and at least one R is not OH;
- or a comestibly or biologically acceptable salt, solvate, or enantiomer thereof or a combination of any of the foregoing compounds, comprising:
- mixing an aryl alcohol from a natural source with ferulic acid and one or more natural acids;
- and
- heating the combination of the aryl alcohol, the ferulic acid, and the one or more natural acid to a temperature of 25° C. to 220° C. for a reaction time of 30 minutes to 24 hours to produce the compound of Formula (I).
A flavor-grade compound of Formula (I):
- wherein R is —OH, C1-C4 alkyl, —CO2H, acyl or formyl;
- m is 2 or 3;
- and at least one R is not OH;
- or a comestibly or biologically acceptable salt, solvate, or enantiomer thereof or a combination of any of the foregoing compounds.
A composition comprising a flavor-grade compound of Formula (I), or a comestibly or biologically acceptable salt, solvate, or enantiomer thereof, or any one of flavor-grade Compounds 1-6, or a comestibly or biologically acceptable salt or solvate thereof;
