Abstract
The present invention provides edible compositions comprising a sweet taste modulator or bitter taste blocker of the present invention, food products comprising such edible compositions and methods of preparing such food products. The present invention also provides methods of reducing the amount of sugar in a food product, methods of reducing the caloric intake in a diet, and methods of enhancing sweet taste or blocking a bitter taste in a food product.
Claims26
A method of enhancing the sweet taste of a sweetener in an edible composition, wherein said method comprises adding an effective amount of a compound of Formula (I)
- or a comestibly or biologically acceptable salt or derivative thereof, or an enantiomer thereof, wherein, as valence and stability permit:
- R1 to R6 are each independently H, OH, C1-C6 alkyl, or C1-C6 alkoxy, provided that at least one of R4 and R6 is not H;
- such that the perception of sweetness intensity of said sweetener is enhanced.
A method of reducing the bitter taste of a bitter tastant in an edible composition, wherein said method comprises adding an effective amount of a compound of Formula (I) or a comestibly or biologically acceptable salt or derivative thereof, or an enantiomer thereof, to said edible composition, such that the perception of bitter taste of said bitter tastant is reduced.

A composition comprising a compound of Formula (I), or any one of Compounds 1-6, or a combination thereof, or an enantiomer thereof, a comestibly or biologically acceptable derivative thereof, or a comestibly or biologically acceptable salt thereof, wherein said composition is edible and capable of enhancing the sweet taste of a sweetener or reducing the bitter taste of a bitter tastant.
The composition of claim 10, wherein the compound of Formula (1), or any one of Compounds 1-3, or a combination thereof, or an enantiomer thereof, a comestibly or biologically acceptable derivative thereof, or a comestibly or biologically acceptable salt thereof, is present in one or more natural extracts.
