Compositions of Vitamin D and Methods for Their Use and Manufacture

A method of making a composition of vitamin D having enhanced bioavailability and enhanced stability, the method comprising:

• a) providing vitamin D;
• and
• b) contacting the vitamin D with at least one comestible oil;
• c) wherein contacting the vitamin D with the comestible oil increases the bioavailability and stability of the vitamin D compared to the bioavailability and stability of control vitamin D that has not been contacted with the comestible oil.

A method of making a vitamin D extract from a plant material, the method comprising:

• a) providing a plant material that contains vitamin D;
• b) contacting the plant material with a supercritical fluid under conditions sufficient to extract vitamin D from the plant material;
• and
• c) collecting the extracted vitamin D thereby providing a vitamin D extract,
• d) wherein the vitamin D extract comprises vitamin D2, vitamin D3 or a combination thereof.
