Abstract
Disclosed is a method for manufacturing instant noodles using extruded noodles, with each noodle having a hole extending therethrough in a longitudinal direction, wherein the hole closes or contracts during boiling or rehydration in hot water and the hole in a cross section of the noodle is configured such that a plurality of grooves are formed rotationally symmetrically about a center of the cross section, extending in an outer radial direction from the center of the cross section of the noodle.
Claims15
A method for manufacturing instant noodles using extruded noodles each having a hole extending therethrough in a longitudinal direction, wherein wheat flour is essential as a raw material for the noodles;
- the method comprising:
- a) extruding noodles such that each noodle is configured so that
- 1) the hole in a cross section of the noodle is configured such that a plurality of grooves are formed rotationally symmetrically about a center of the cross section, extending in an outer radial direction from the center of the cross section of the noodle;
- 2) the hole has an air gap at the center of the cross-section, the air gap being formed by the plurality of grooves overlapping each other;
- and
- 3) the hole closes during boiling or rehydration in hot water, or contracts to such an extent as to allow the grooves excluding the air gap to be closed;
- b) pregelatinizing the extruded noodles;
- and
- c) drying the extruded noodles after pregelatinization.
A method for manufacturing dried noodles using extruded noodles each having a hole extending therethrough in a longitudinal direction, wherein wheat flour is essential as a raw material for the noodles;
- the method comprising:
- a) extruding noodles such that each noodle is configured so that
- 1) the hole in a cross section of the noodle is configured such that a plurality of grooves are formed rotationally symmetrically about a center of the cross section, extending in an outer radial direction from the center of the cross section of the noodle;
- 2) the hole has an air gap at the center of the cross-section, the air gap being formed by the plurality of grooves overlapping each other;
- 3) the hole closes during boiling or rehydration in hot water, or contracts to such an extent as to allow the grooves excluding the air gap to be closed;
- and
- b) without pregelatinizing the noodles, drying the extruded noodles.
A method for manufacturing instant noodles using extruded noodles each having a hole extending therethrough in a longitudinal direction, wherein wheat flour is essential as a raw material for the noodles;
- the method comprising:
- a) extruding noodles such that each noodle is configured so that
- 1) the hole in a cross section of the noodle is configured such that a plurality of grooves are formed rotationally symmetrically about a center of the cross section, extending in an outer radial direction from the center of the cross section of the noodle;
- 2) the hole has an air gap at the center of the cross-section of the noodle, wherein the plurality of grooves are located adjacent to each other in a circumferential direction of the noodle and are within the noodle, and further wherein the plurality of grooves open to the center of the cross section of the noodle to form the air gap;
- and
- 3) the hole closes during boiling or rehydration in hot water, or contracts to such an extent as to allow the grooves excluding the air gap to be closed;
- and
- b) drying the extruded noodles.
