A process for coating a frozen confection product with an aerated fat-continuous coating, the process comprising the steps of:
- (a) providing the aerated coating in liquid form, wherein the aerated coating has an overrun of 20 to 200%;
- (b) dipping the frozen confection product into the aerated liquid coating;
- and
- (c) removing the frozen confection product from the aerated liquid coating,
- characterised in that the aerated coating comprises from 0.05 to 5% by weight of at least one sucrose ester with an HLB value of between 1 and 9, and that the process comprises the additional and subsequent step of:
- (d) passing the frozen confection product through at least one laminar airflow projected by an air knife.
