Abstract
The present invention provides compositions of modified pectin and methods for preparing and using them.

A liquid composition comprising a copolymer of homogalacturonic acid and rhamnogalacturonan I having galactose- and arabinose-containing sidechains, wherein the copolymer has an average molecular weight in the range of 10-250 kD and a polydispersity below 2.5, and wherein the composition is substantially free of modified pectins having molecular weights below 25 kD.
A liquid composition comprising a polysaccharide having a deesterified and partially depolymerized rhamnogalacturonan and homogalacturonan backbone with neutral sugar side chains, wherein the polysaccharide has a degree of esterification between 20% and 60% and an average molecular weight in the range of 10-250 kD, and wherein the composition is substantially free of modified pectins having molecular weights below 25 kD.
A liquid composition comprising particles of a copolymer of homogalacturonic acid and rhamnogalacturonan I having galactose- and arabinose-containing sidechains, wherein the copolymer has an average molecular weight in the range of 10-250 kD, the particles have an average particle size less than 0.65 μm as measured by dynamic light scattering or atomic force microscopy and the composition is substantially free of modified pectins having molecular weights below 25 kD.
