Probiotic or symbiotic gelled products and method for the production thereof

A gelled product comprising a mixture comprising:

• a juice composition comprising at least one of a fruit juice, a vegetable juice, a greens juice, and a cereal juice;
• and
• a gelling agent that has been mixed with the juice composition,
• wherein the juice composition has previously undergone a process of lactic fermentation using a probiotic strain selected from Lactobacillus, Streptococcus, Bifidobacterium, and combinations thereof,
• wherein prior to the fermentation, the juice composition was at least one of pasteurized and sterilized,
• wherein the juice composition comprises at least one of a carbohydrate and a sugar added as an adjuvant substrate,
• wherein the mixture further comprises an additive selected from inulin, an artificial sweetener, a non-metabolizable sugar, a protein, a carbohydrate, a fatty acid, a vitamin, a mineral, fibre, an oligosaccharide with a bifidogenic effect, and a combination thereof,
• wherein the gelling agent has been hydrated with water,
• wherein the gelling agent comprises at least one of gelatin, agar, and carrageenan, and
• wherein a thickener has been mixed with the juice composition and the gelling agent.
