Abstract
Glucosyl stevia compositions are prepared from steviol glycosides of Stevia rebaudiana Bertoni. The glucosylation was performed by cyclodextrin glucanotransferase using the starch as source of glucose residues. The short-chain glucosyl stevia compositions were purified to >95% content of total steviol glycosides. The compositions can be used as sweetness enhancers, flavor enhancers and sweeteners in foods, beverages, cosmetics and pharmaceuticals.

1-24. (canceled)
A process for making a glucosyl stevia composition, comprising the steps of:
- (a) adding starch into water to form a starch suspension;
- (b) adding a first hydrolyzing enzyme selected from the group consisting of CGTase, α-amylase, β-amylase, and mixtures thereof, into the starch suspension, and incubating at a temperature of about 70° C. to 90° C. for about 0.5 to about 5 hours, resulting in a liquefied starch suspension;
- (c) inactivating the first hydrolyzing enzyme by low pH heat treatment;
- (d) adding steviol glycosides into the liquefied starch suspension, resulting in a reaction mixture;
- and
- (e) adding a transglucosylation enzyme into the reaction mixture and incubating for about 12 to 48 hours at about 55-75° C. to transglucosylate the steviol glycosides, resulting in a glucosyl stevia composition comprising steviol glycoside derivatives having up to 9 α-1,4-glucosyl residues.
