Abstract
Shredded or flaked whole grain-containing composite food products, such as ready-to-eat cereals, and sweet and savory snacks, are continuously produced by pelletizing cooked, tempered, whole cereal grain particles in the presence of vegetables, fruit, or dairy cheese. In another aspect, an enrobing coating containing chocolate is applied to a baked shredded laminate product of the pelletization, wherein the shredded product may further optionally include fruit added and present during pelletization.
Claims33
A method for improving the shreddability or flakability of retrograded, whole cereal grain particles in producing a shredded or flaked composite food product, comprising:
- pelletizing cooked and tempered whole cereal grain particles which have undergone retrogradation to a hard, fracturable texture, in the presence of a food component selected from the group consisting of vegetables, fruits, and dairy cheese, to obtain composite food pellets having a soft, pliable texture;
- shredding or flaking the composite food pellets to provide shredded or flaked composite food pellets;
- forming, in the instance of shredded composite food pellets, a shredded composite food laminate from the shredded composite food pellets;
- and
- baking the shredded composite food laminate or flaked composite food pellets to obtain a shredded or flaked composite food product.
A method for producing a shredded composite food product comprising:
- a) providing a whole grain-containing mixture comprising cooked and tempered whole grain particles and a food component selected from the group consisting of vegetables, fruit, and dairy cheese;
- b) pelletizing the whole grain-containing mixture in a pelletizer to obtain composite food pellets;
- c) shredding the composite food pellets to provide shredded composite food pellets;
- d) laminating the shredded composite food pellets to obtain a shredded composite food laminate;
- e) dividing the shredded composite food laminate into discrete composite food pieces;
- f) baking the shredded composite food laminate prior to step e) or composite food pieces after step e) to obtain a shredded composite food product.
A method for improving the shreddability of retrograded, whole cereal grain particles in producing an enrobed, shredded composite food product, comprising:
- pelletizing cooked and tempered whole cereal grain particles which have undergone retrogradation to a hard, fracturable texture, and optionally in the presence of fruit, to obtain food pellets having a soft, pliable texture;
- shredding the food pellets to provide shredded food pellets;
- forming a shredded food laminate from the shredded food pellets;
- dividing the shredded food laminate into discrete shredded food pieces;
- baking the discrete shredded food pieces to obtain baked, shredded food substrates;
- enrobing the baked, shredded food substrates with an enrobing coating containing chocolate to provide enrobed, shredded composite food products.
