A β-amylase gene comprising DNA selected from the group consisting of the following (A) to (C):
- (A) DNA encoding an amino acid sequence set forth in SEQ ID NO:
- 7;
- (B) DNA having a base sequence set forth in SEQ ID NO:
- 6;
- and
- (C) DNA having a base sequence equivalent to the base sequence set forth in SEQ ID NO:
- 6, and having a β-amylase activity.
