Abstract
Various low sodium salt substitute compositions are disclosed, as well as food products comprising the same.

A low sodium salt replacement composition comprising:
- from about 38% to 41% maltodextrin;
- from about 3% to 4% di-sodium inosinate & guanylate;
- from about 10% to 11% sodium acid sulfate;
- from about 6% to 13% salt;
- from about 0.04% to 006% silicon dioxide;
- from about 0.2% to 0.3% calcium gluconate or sodium gluconate;
- and
- from about 33% to 40% sea salt.

- a low sodium salt substitute composition that comprises:
- from about 38% to 41% maltodextrin;
